A savory pie layered with seasoned beef and vegetables, then topped with a creamy layer of mashed potatoes. We like to call it comfort pie!
- 1 LB RAIKES BEEF PREMIUM GROUND BEEF
- 2 LEEKS, THINLY SLICED
- 1 C CARROTS, THINLY SLICED
- 1 C BEEF STOCK
- 2 TBSP TOMATO PASTE
- 4 C MASHED POTATOES (USE PRE-MADE IF SHORT ON TIME)
- 1/2 C IRISH CHEDDAR, GRATED
- 1 TBSP WORCESTERSHIRE
- 2 TSP DRIED ROSEMARY
- 2 TSP DRIED THYME
- 1 TBSP OLIVE OIL
- SALT AND PEPPER TO TASTE
Brown the ground beef in a large skillet, season with salt and pepper. Remove to a large bowl. Heat the olive oil in skillet, add leeks and carrots and saute until they soften. Add the beef back to pan with tomato paste, Worcestershire, rosemary, thyme and cook until mixture starts to thicken.
Place the beef mixture in a large deep dish pie pan or casserole dish. Top with mashed potatoes and cheese.
Bake at 400 degrees for 30 minutes. Enjoy!
