Hearty Cuban slowed cooked beef dish.
INGREDIENTS
- 2-3 LB RAIKES BEEF CHUCK ROAST
- 6 GARLIC CLOVES
- 1 TBSP OIL
- 2 8 OZ CANS TOMATO SAUCE
- 1 GREEN BELL PEPPER (THINLY SLICED)
- 1 ONION (THINLY SLICED)
- 1 4 OZ CAN GREEN CHILES
- 2 TBSP TOMATO PASTE
- 2 TSP DRIED OREGANO
- 2 TSP SALT
- 2 TBSP CUMIN
- 1/2 TSP RED PEPPER FLAKES
- JUICE OF A LIME
- 1/4 CUP CILANTRO & LIME WEDGES FOR SERVING
COOKING INSTRUCTIONS
Cuts slits into the roast and insert one garlic clove into each slit. Heat the oil in large skillet and brown the roast on all sides. Transfer to slow cooker and add the onions, bell pepper, tomato sauce, tomato paste, green chilies, and spices. Slow cook for 6 hours until the meat is tender.
Shred the roast with two forks. Serve over rice and garnish with cilantro and a fresh squeeze of a lime wedge. They make perfect tacos too! Enjoy!
