Wagyu Beef and Beer Stew

Ingredients

  • 1lb Wagyu Steak Tips 
  • 3 TB cornstarch
  • Imperial Stout Rub from Derek Wolf @spiceology
  • 3 cups Beef Broth
  • 1 cup Beer
  • 2 TB Apple Cider Vinegar
  • 2TB Worcestershire
  • 2TB Tomato Paste
  • Fresh Cracked Black Pepper
  • 2 Bay Leaves
  • 1 Onion
  • 3 Garlic cloves
  • 3 Celery stalks
  • 4 Medium Yellow Potatoes
  • 3 Carrots
  • 4 TB Avocado Oil

Cooking Instructions

Season Steak Tips with Rub, Black Pepper and Cornstarch. Set Aside.

Heat 2TB oil. Sauté Onion and Garlic until halfway translucent. Don't overcook.
Set aside.

Heat 2TB oil. Add Steak Tips.

Brown all sides. Remove from pan.

Add a splash of Beef Broth and scrape the stuck bits off the bottom of the pot.

Return meat to pot and add remaining Broth, Beer, Worcestershire, Apple Cider Vinegar and Tomato Paste and Bay Leaves. Stir and Cover.

Bring to a Boil then reduce to medium.

Cook 20 minutes then add Potatoes, Carrots, Celery and place sautéed Onion and Garlic on top of veggies. Don't Stir.

Cover and cook until veggies are fork tender, about 20-30 minutes longer. Taste and adjust seasonings.
