Grilled Greek Souvlaki Skewers


Try this easy and delicious Greek Souvlaki recipe from our friend Ryan Cooper of BBQ Tourist. These skewers cook quickly on the grill and can be combined with your favorite vegetables. Served on a bed of rice or stuffed inside some warm pita bread, you’ll definitely want to add this tasty and versatile dish to your rotation.

INGREDIENTS:

For Skewers:

  • 1 lb Raikes Beef Tenderloin Tips
  • 1 small yellow onion, cut into large chunks
  • 4-5 white mushrooms

For Marinade:

  • ¼ cup Extra Virgin Olive Oil
  • Juice and zest of 1 lemon
  • ¼ cup balsamic vinegar
  • 4 garlic cloves, crushed
  • 2 tsp dried oregano
  • Salt and pepper, to taste

INSTRUCTIONS:

  1. In a bowl, whisk together marinade ingredients and add Raikes Beef Tenderloin Tips, ensuring beef is coated well on all sides. If grilling immediately, let beef marinate at room temperature for one hour. If preparing for later, cover and marinate in the refrigerator overnight.
  1. Prepare grill for direct heat cooking at 400 degrees F. 
  1. Cut onions or other vegetables, such as bell peppers, into large chunks.
  1. Prepare skewers for the grill. If using wooden skewers, soak in water for at least 30 minutes prior to grilling. Add beef to skewers for the grill, alternating with onions, mushrooms, or other vegetables.
  1. Add skewers to the grill and cover. Rotate the skewers occasionally and cook until the steak pieces are cooked to your desired level of doneness.
  1. Remove skewers from the grill and let rest for a few minutes. Carefully slide beef and vegetables off of the skewers, serve and enjoy!
