Ground Beef and Sweet Potato Taco Skillet


All the taco fixings in one skillet. Tasty, easy weeknight meal!

INGREDIENTS

  • 1 LB RAIKES PREMIUM GROUND BEEF
  • 1 LARGE SWEET POTATO, DICED
  • 2 TBSP OLIVE OIL
  • HALF YELLOW ONION, CHOPPED
  • 7 OZ DICED TOMATOES 
  • 1 RED BELL PEPPER, CHOPPED
  • 1 CUP FIRE ROASTED CORN
  • 1 TBSP CHILI POWDER
  • 1/2 TBSP CUMIN
  • 1/2 TBSP PAPRIKA
  • 1/2 TBSP OREGANO
  • 1 TSP ONION POWDER
  • 1 TSP GARLIC POWDER
  • 1 TSP SALT

COOKING INSTRUCTIONS

Heat olive oil in skillet and sweet potatoes cooking for 10 minutes. In the mean time add all the seasonings (chili powder through salt) into a small bowl. Add the onion and bell pepper cooking until translucent. Then add ground beef, breaking into chunks and cooking until there is no pink. Add in the seasoning mixture, diced tomatoes and fire roasted corn. Simmer the mixture over low-medium heat until the sweet potatoes are fork tender.

Garnish with guacamole, colby jack cheese, cilantro and lime wedges. Enjoy!
