Easy and tasty appetizer or weeknight dinner.
- 1.5 LBS RAIKES BEEF SKIRT STEAK
- SALT AND PEPPER TO TASTE
- 4 TBSP CHOPPED CILANTRO
- 1 TBSP MINCED GARLIC
- ZEST AND JUICE FROM 1 LIME
- 3/4 CUP SHREDDED MANCHEGO CHEESE
Cut skirt steak in half. Then salt and pepper both sides of meat.
In a small bowl mix cilantro, garlic, lime zest and juice . Sprinkle the mixture of the meat. Then sprinkle Manchego on top of cilantro mixture.
Roll up into 3” segments - lengthwise cutting at 3” mark. Secure with 3 toothpicks - cutting between toothpicks.
Place pinwheels on sheet pan.
Heat large skillet on stove. Sear pinwheels on both sides for 3 minutes until medium-rare.
Great appetizer or main course!
