Manchego Cheese & Skirt Steak Pinwheels


Easy and tasty appetizer or weeknight dinner.

INGREDIENTS

  • 1.5 LBS RAIKES BEEF SKIRT STEAK
  • SALT AND PEPPER TO TASTE
  • 4 TBSP CHOPPED CILANTRO
  • 1 TBSP MINCED GARLIC
  • ZEST AND JUICE FROM 1 LIME
  • 3/4 CUP SHREDDED MANCHEGO CHEESE 

COOKING INSTRUCTIONS

Cut skirt steak in half. Then salt and pepper both sides of meat.

In a small bowl mix cilantro, garlic, lime zest and juice . Sprinkle the mixture of the meat. Then sprinkle Manchego on top of cilantro mixture.

Roll up into 3” segments - lengthwise cutting at 3” mark. Secure with 3 toothpicks - cutting between toothpicks.

Place pinwheels on sheet pan.

Heat large skillet on stove. Sear pinwheels on both sides for 3 minutes until medium-rare.

Serve immediately.

Great appetizer or main course!
