Skirt steak is a delicious cut for the grill. While it is full of flavor, it is also tough and fibrous, so marinating for a few hours or more is your best bet. This cut is also a thinner cut than most other steaks and typically requires only a few minutes over direct heat on the grill. Check out our friend BBQ Tourist's marinade recipe for skirt steak!
Ingredients
- 1 cup of fresh chopped cilantro
- 2 tablespoons soy sauce
- Zest and juice of 1 lime
- 1/2 cup of olive oil
- 1 tablespoon brown sugar
- 1 tablespoon cumin
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 3 garlic cloves, crushed
Cooking Instructions
To make the skirt steak marinade, mix the cilantro, soy sauce, lime zest and juice, olive oil, brown sugar, cumin, salt, pepper, and garlic in a bowl. Stir until well combined.
Completely cover the skirt steak with the marinade and refrigerate for at least two hours.
Grill the skirt steak over direct heat for a few minutes per side.
Serve on warm tortillas and enjoy!
